Each slab of ribs is trimmed to our very tight specifications, and every pork shoulder is hand pulled… no automation. What started in Memphis over 30 years ago has become a Southern favorite. You‘ll swear that Beale Street is just around the corner and that Corky’s is right smack in the middle of Hog Heaven. Right in the heart of East Tennessee!
